Peanut butter brownie balls
These guys are super charged balls that are not overly sweet and contain cinnamon to help balance blood sugars, as well as Chia seeds for protein.
Good for a arvo kick start snack before post work exercising.
1 cup medjool dates (stones removed)
½ cup Peanut Butter (or nut butter of choice)
½ cup shredded or desiccated coconut (plus extra for rolling)
¼ cup coconut oil
1 Tbsp cacao nibs (optional)
1Tbsp chia seeds
1 Tbsp cacao powder
1 tsp vanilla extract
Pinch of pink himalayan salt
Whiz all ingredients in a food processor and roll into small tablespoon size balls and dust with cacao power or desiccated coconut and into the fridge to set.
Add some balls to your weekend food prep and take one ball to work each day for a boost of energy.
