Lemony Balls

Julia Frances Wellness Balls 2

A not so sweet snack for when you just want a sweet treat. This is my version of Lola Berry's Lemon Pie Bites...

Ingredients

1 1/2 cups shredded coconut

1/2 cup nuts

(cashews, walnuts or almonds - I've also used sunflower seeds to make these nut free for a friend)

1/4 cup melted coconut oil

1 tbsp tahini 1 tbsp maple syrup,

coconut nectar or other sweetness

1/2 tsp vanilla extract or paste

zest of 1 lemon juice of 2 lemons

pinch of salt

extra shredded or desiccated coconut for rolling

To Prepare

1: Whiz all of the ingredients in your food processor or Nutribullet, until smooth.

2: Roll teaspoon size heaps into balls, it helps if your hands a slightly damp for this. Roll in coconut.

3: Place each ball on a flat tray or plate and into the fridge to set. Store in a container in the fridge or freezer.
