Apricot-almond protein balls
Want a winner work snack for the week? When I created these I pretty much free-balled, using what I had and they worked out delish
1 cup almonds
3/4 cup dried apricots
1 tbsp tahini or nut butter
2 tsp coconut oil
1 tsp honey (optional)
1/2 tsp cinnamon
1 scoop plant based Vanilla protein powder (optional)
Pinch of salt
A whole lotta love
1. Whiz it all up, in a food processor or nutribullet - anything with a bit of power.
2. Roll into bite size morsels and fridge 'em to set and store in the fridge or freezer (they won't freeze like rocks because of the (healthy) fat content)
You can use various nuts or seeds, in fact use what you've got and have a play with your own flavour combos..don't be afraid!
