Mango and Coconut Chia Breakfast Pudding
‘Chia‘ is an ancient word for ‘Strength’ and provide sustained energy and promote fullness. Making them perfect for breakfast!
Chia seeds are high in fibre and are one of the richest plant-based sources of these fatty acids.
They expand in your stomach to increase fullness and slow down the absorption of food, which can help digestion.
Serves 1
Ingredients
¼ cup Chia Seeds
1 ½ cup of coconut milk
4 strips of organic dried mango chopped into 1.cm pieces
1 teaspoon of coconut nectar or maple syrup (optional)
½ teaspoon organic cinnamon (optional)
Toppings
Coconut flakes
Coconut Yoghurt
Cinnamon
Fresh fruit and nuts if desired.
Method
Combine all ingredients in a glass jar with a lid or a bowl and leave overnight or until all the chia seeds soak up as much liquid as they can (about 30 mins).
You want it to be loose, not solid, so if it is too dense and not liquidy enough, add some more coconut milk.
To serve, top with coconut and desired toppings.
Enjoy right away or take with you in a jar to have later in the day.
